Inspiration for the 2024 autumn and festive seasons
Which flavours should we watch out for during the coming autumn and which products will we be enjoying during the 2024 festive season? We develop our flavour-directions on the basis of trends and after looking at how consumers are currently deciding on their choices.
Factors that influence our choice of what to eat
A number of factors play a role when it comes to deciding what we will eat. Factors such as our age, the culinary tradition in which we have grown up, our available funds and our willingness to spend money on food, but also factors such as the effect on our health and our personal preferences.
Festive raclette grill dishes are always popular
During the festive season we really enjoy firing up the raclette grill. Every generation loves a raclette party, not only because of the convivial atmosphere but also because it involves a variety of products and dishes being served. And that means the host or hostess can take every food preference into account.
These are the flavour-directions we will see
If we look at the current trends several flavour-directions become apparent. ‘Spicy’ and ‘smoked’ are and will remain popular flavours via ingredients such as black pepper, garlic, chilli and chipotle. Rhubarb’s surprisingly soft taste is innovative. Impactful flavours are often experienced as a treat or a happy moment. You can achieve this with flavour-directions such as garlic and ginger and with fruit flavours like orange and lemon.
Flavourings and spice mixes:
Dutch Spices Korean style spice mix: is a spice mix with an eastern twist thanks to ingredients such as chilli, fennel, ginger and paprika. Spread the spice mix over a roulade for a traditional Christmas meal with an Asian tint. It combines well with a potato towers prepared using Dutch Spices truffle gratin sauce, a sauce that tastes of cheese with a hint if truffles and mushrooms.
Dutch Spices rhubarb rub: rhubarb is a relatively new flavour that combines well with poultry, for example chicken thighs, which can themselves be used in a wide variety of dishes. The rub can be used in many ways, for example in main dishes and raclette grill dishes. The spice mix also works well in roasts and tray bakes in the autumn and during the festive season.
Dutch Spices lemon pepper seasoning: a spice mix with the fresh taste of lemon plus the spiciness of pepper. Delicious on fish, such as salmon, as a main dish or with a traditional raclette.
Dutch Spices lemon sage seasoning: a coarse and colourful spice mix. Sage is a new taste experience for many people. The spice mix can be mixed through a minced (meat) mixture to make a meatloaf as a Christmas centrepiece and combines perfectly with hasselback potatoes and vegetables such as pumpkin and fennel.
Flavours in sauces:
Dutch Spices ginger lemon sauce: this sauce has a soya with ginger taste and goes well with poultry and (winter) vegetables. Oriental inspiration, delicious in the autumn, the winter and during the festive season.
Dutch Spices truffle gratin sauce: a sauce that tastes of cheese with a hint if truffles and mushrooms. A basis sauce that turns a traditional potato dish into something special. Adding different (fresh) ingredients enables many different variations of the sauce – and the resulting dishes – to be created.
Dutch Spices garlic soya-style marinade: another top product with an eastern taste twist of soya and garlic. Delicious with chicken wings as a snack or side dish that will result in fingers being licked due to both the fantastic flavour and the sticky sauce.
Flavours in marinades:
Dutch Spices orange flavoured cinnamon marinade: preserves and emphasises the original flavour of vegetables, but adds a spicy note with the warm flavour twist of orange and cinnamon. The marinade also combines well with poultry (whole chicken or chicken breasts), when serving a traditional Christmas roast and duchesse potatoes.
Dutch Spices black garlic marinade: this marinade gives a unique taste experience and a happy moment through the taste of black garlic. The marinade combines well with the more luxurious beef cuts, such as steak, and perfectly with (oriental) vegetables.
Dutch Spices peri peri marinade: not a new flavour, but one with ‘staying-power’ due to the delicious spicy note of cayenne pepper. This marinade adds flavour to a wide variety of dishes, including chicken-based dishes.
