Stuffed Creamy Onion roulade with bacon

Ingredients
- 65 gr/kg Dutch Spices Creamy Onion marinade (1004050)
- 1 kg procureur (boned pork shoulder/neck)
- 100 gr katenspek rashers (smoked streaky bacon)
- 1 apple, chopped
- 6 prunes, soaked, pitted and chopped
- 30 gr cashew nuts, chopped
- Roulade string or net
Preparation
- Trim the boned shoulder/neck ready to be rolled.
- Lay the rashers of bacon in two rows on a chopping board and lay the pork shoulder/neck on top of the rashers.
- Marinate the roulade in the Dutch Spices Creamy Onion Marinade
- Consumer: Heat butter in a frying pan and fry the roulade turning it until it is brown all over (approx. 4 minutes). Insert a meat thermometer into the centre of the roulade making sure it does not touch the filling. Roast the roulade in the centre of the oven for 50 minutes or until the temperature in the centre reaches 68° C. Take the roulade out of the oven, remove the thermometer, cover the roulade with aluminium foil and leave it to rest for 10 minutes before cutting into slices.
